PRIMARY RESPONSIBILITIES
1. Food and Menu • Prepare and cook food as per the restaurant’s existing recipes • Invent new dishes according to season’s availability • Fix menu in accordance with current market trend • Keep up to date with new recipes and ingredients • Modifying menu and dishes based on customer’s dietary requirements • Prepare and cook international dishes based on customer’s ethnic requirements • Liaise with the front staff to receive and review customer feedback, and modifying menu and dishes based on customer feedback • Sourcing fresh necessary ingredients and raw materials for all restaurant dishes • Preparation and readying of basic ingredients and prep-materials used in preparation of final products • Ensure highest quality standards of meal preparation, presentation, and hygiene
Food Safety Standards Compliance • Follow appropriate procedure for food storage in accordance with recognized food safety rules, regulations, and principles • Setting and monitoring appropriate temperature of storage facilities • Setting and monitoring oven temperature checks
Costing, Budgeting & Ordering • Work with the management on planning budgetary requirements for kitchen operations, including that of staff, ingredients, raw materials, and equipment costs • Update costing information for all ingredients used in the restaurant’s dishes • Ensure meeting with budgets set by the management • Providing costing estimates for new dishes or menu items • Work with the management on inventory and raw material management related to food ingredients and raw materials
Management, Selection and Training of Staff • Supervise kitchen staff • Assist the management with hiring of new kitchen staff • Train kitchen staff for meal preparation, presentation, food storage and general hygiene • Drawing coordination in all sections of kitchen
